This American dinner dish features seasoned chicken strips, coated in breadcrumbs and baked until golden. While the chicken cooks, a simple sauce of lemon juice, sugar and curry powder is prepared on the hob. The finished tenders are drizzled with the warm, flavourful sauce for a tasty and straightforward meal that serves four.

Lemon Chicken Tenders

Ingredients

  • 0.5 teaspoon ground paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 large eggs
  • 1 cup Italian seasoned bread crumbs
  • 3 large boneless, skinless chicken breasts, cut into 2-inch pieces
  • 0.5 cup white sugar
  • 0.5 cup lemon juice
  • 1.5 teaspoons curry powder

Method

  1. Heat your oven to 400 degrees F (200 degrees C). Use aluminium foil to line a baking sheet with a rim.
  2. Combine the paprika, salt and pepper in one small bowl. In a separate bowl, whisk the eggs. Put the Italian seasoned bread crumbs into a third bowl.
  3. Distribute the seasoning mix over the chicken pieces. Coat each piece first in the beaten egg, then roll it in the bread crumbs. Place the coated chicken in one layer on your prepared pan.
  4. Place the pan in the heated oven and bake for 15 minutes, remembering to turn the pieces over once during this time.
  5. While the chicken bakes, mix the white sugar, lemon juice and curry powder in a small saucepan. Place it over medium-low heat, stirring until the sugar has fully dissolved, which should take about 5 minutes.
  6. Once the chicken has baked for 15 minutes, take it from the oven. Pour the prepared lemon sauce over the top. Place the pan back in the oven and continue to bake for 5 more minutes.
