Lebkuchen
This recipe guides you through making classic German lebkuchen, a spiced biscuit reminiscent of gingerbread. Combining honey, almonds, and festive spices like ginger and cinnamon, the dough is shaped into small discs and baked. Once cooled, the biscuits are finished with a simple lemon-scented icing. The process yields about 30 pieces, making them an ideal homemade snack or festive treat.
Ingredients
- 250g plain flour
- 85g ground almond
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp bicarbonate of soda
- 200ml clear honey
- 1 lemon finely grated zest
- 85g butter
- pinch each ground cloves grated nutmeg and black pepper
- 1 tsp baking powder
- 100g icing sugar
- 1 egg white beaten
Method
- Combine all the dry ingredients in a large mixing bowl. Gently warm the honey and butter in a saucepan until the butter has fully melted, then pour this liquid into the bowl along with the lemon zest. Stir thoroughly to bring everything together into a fairly solid dough. Cover the bowl and allow the mixture to cool completely.
- Preheat your oven to 180C/fan160C/gas 4. Take portions of the dough and use your hands to roll roughly 30 balls, each about 3cm wide. Gently press each ball to form a slightly flattened disk. Arrange the biscuits on two baking trays lined with parchment, ensuring they have space to spread. Bake for 15 mins before transferring to a wire rack to cool.
- For the icing, blend the icing sugar with the beaten egg white and 1-2 tbsp water until you achieve a smooth, runny consistency. Dip the top surface of each cooled biscuit into the icing, then use the back of a knife to spread it evenly. Allow the iced biscuits to dry fully in a warm room.
