Leafy Salsa Verde with Yogurt
This vibrant dip combines a fresh herb salsa verde with creamy Greek yogurt. Packed with flat-leaf parsley, basil, and mint, it creates a light and flavourful centrepiece for a sharing platter. The herby dressing is swirled into the yogurt, making it ideal for scooping up with seasonal, crunchy vegetables like radishes, fennel, and chicory. Ready in just 10 minutes, it serves six people as a tasty snack.
Ingredients
- 1/2 small pack flat-leaf parsley
- 1/2 small pack basil plus a few extra leaves to serve
- 1/2 small pack mint
- 4 tbsp olive oil
- 2 tbsp white wine vinegar
- 250g-300g Greek yogurt or labneh
- radishes fennel and chicory
Method
- Blend all ingredients except the yogurt in a food processor or with a stick blender until you achieve a pesto-like consistency.
- Transfer the yogurt to a shallow bowl and spread it out, creating swirls and indentations. Pour the herby mixture over the top so it forms pools, then gently ripple it into the yogurt. Finish with a few small basil leaves and serve alongside crunchy salad vegetables such as radishes, fennel, and chicory.
