Lazy Cheesy Vegetable Hotpot
This is the ultimate in simple, comforting vegetarian cooking. The entire dish is prepared in a single microwavable dish, meaning there is very little cleaning up afterwards. It features layers of leeks, Savoy cabbage, mushrooms and thinly sliced potatoes, all cooked together. The hotpot is finished with slices of vegetarian Camembert and fresh thyme, creating a wonderfully rich and cheesy topping. It's a perfect, fuss-free option for a cosy dinner, lunch or supper.
Ingredients
- 3 leeks trimmed, washed and roughly sliced
- large knob butter
- 1/2 small Savoy cabbage shredded
- 8 chestnut mushrooms sliced
- 4 tbsp crème fraîche
- 3medium potatoes peeled and thinly sliced
- 1small vegetarian camembert or other rinded soft cheese, sliced with the rind on
- 1 tbsp thyme leaf
Method
- Place the leeks in a shallow microwavable dish with half the butter. Microwave on High for 5 mins until starting to soften. Mix in the shredded cabbage and sliced mushrooms, then stir through the crème fraîche. Arrange the potato slices over the vegetable mixture, pressing them down gently.
- Dot the remaining butter over the potatoes. Microwave, uncovered, on High for 15-20 mins until the potatoes are tender. Top with the sliced cheese and thyme leaves. Microwave on High for 2 mins to melt the cheese, or place under a grill to brown. Allow it to rest for a few minutes before serving directly from the dish.
