Layered Tamale Pie
This family recipe transforms a traditional concept into a layered pie. It features seasoned ground beef with corn and tomatoes, layered between corn tortillas and plenty of cheese, then baked until golden. The result is a hearty and flavourful dish that appeals to all ages. It yields one pie, which can be sliced into eight generous portions.
Ingredients
- 3 teaspoons olive oil
- 1/4 cup chopped onion
- 1 lb ground beef
- 1 (1 1/2 ounce) package taco seasoning
- 3/4 cup water
- 2 1/2 cups canned crushed tomatoes
- 1 1/2 cups corn kernels
- 2/3 cup yellow cornmeal
- 8 corn tortillas
- 3 cups shredded cheddar cheese or 3 cups Mexican blend cheese
Method
- Set your oven to heat to 350 degrees.
- Warm the oil in a large skillet, then add the chopped onion and cook it until tender.
- Put in the ground beef and cook it thoroughly, then drain away any excess fat.
- Combine the taco seasoning and 3/4 cup water with the beef, letting it simmer uncovered for 5 minutes while you stir often until the liquid reduces.
- Add the crushed tomatoes, corn kernels and cornmeal to the skillet, mixing everything together well.
- Take a 9x9 inch round baking dish and arrange four of the corn tortillas to cover the base. Spoon half of the meat mixture over them, then top with half of the shredded cheese.
- Create another identical layer with the remaining four tortillas, the rest of the meat and finish with the remaining cheese.
- Bake the pie in the oven for about 25 minutes so it heats through and the cheese melts completely.
- Once baked, slice the pie into eight pieces as you would a traditional pie.
- The dish is now ready to be served.
