Lamb Pizza Pies

Ingredients

  • 1 tbsp olive oil
  • 1small onion chopped
  • 350g minced lamb
  • 1 tsp ground cinnamon
  • 50g walnut pieces, chopped
  • large handful mint leaves, roughly chopped
  • 145g sachet pizza base mix
  • 2 tomatoes sliced

Method

  1. Set your oven to 220C/fan 200C/gas 7. Warm the oil in a large pan and cook the chopped onion, minced lamb, and cinnamon for 5 mins until the meat is browned. Remove from the heat, season, and mix through the chopped walnuts and mint.
  2. Make the pizza base mix following the packet directions, omitting the rising step. Split the dough into four pieces and shape each into a small circle on a baking tray. Cover one half of each circle with the lamb mixture, top with 2 tomato slices, and fold the other half of the dough over. Seal the edges, make 3 slashes on top, and bake for 10-15 mins until the pastry is golden and fully cooked.
