Korean Soft Tofu Stew (Soon Du Bu Jigae)
This classic Korean stew, known as Soon Du Bu Jigae, is a comforting and versatile dinner option. It combines soft tofu with seasoned ground beef in a broth flavoured with Korean chile powder and soy bean paste. The dish is finished with a fresh egg, sesame seeds, and green onion for a complete meal that is both nourishing and quick to prepare, taking just 20 minutes from start to finish.
Ingredients
- 1 teaspoon vegetable oil
- 1 teaspoon Korean chile powder
- 2 tablespoons ground beef
- 1 tablespoon Korean soy bean paste (doenjang)
- 1 cup water
- salt and pepper to taste
- 1 (12 ounce) package Korean soon tofu or soft tofu, drained and sliced
- 1 egg
- 1 teaspoon sesame seeds
- 1 green onion, chopped
Method
- 1. Warm the vegetable oil in a large saucepan. Add the Korean chile powder and ground beef, stirring until the meat is browned and crumbled. 2. Mix in the Korean soy bean paste to coat the beef. Pour in the water and bring the mixture to a boil. Season with salt and pepper. 3. Carefully add the sliced soft tofu to the soup and cook for 1 to 2 minutes until warmed. 4. Take the pan off the heat and immediately stir in the egg, allowing it to break apart in the hot soup. 5. Finish by sprinkling the stew with sesame seeds and chopped green onion.
