Korean Sesame Pork Stir-Fry
This Korean-inspired stir-fry is a fast and satisfying meal. Thin strips of pork loin are marinated in a flavourful blend of sesame oil, seeds, soy sauce, mirin, chilli sauce and ginger. They are then quickly fried in a wok with sliced red peppers and spring onions until everything is cooked through and tender. The entire dish comes together in just half an hour, making it a perfect weeknight dinner option when served with a side of cooked rice.
Ingredients
- 2 tbsp sesame oil
- 25g sesame seeds
- 1 tbsp soy sauce
- 1 tbsp mirin
- 2 tbsp hot chilli sauce
- 25g ginger finely grated
- 500g pork loin or leg steaks, cut into thin strips
- 8 spring onions cut into long pieces
- 2 red peppers deseeded and thinly sliced
- cooked rice to serve
Method
- 1. Combine 1 tbsp of the sesame oil with the sesame seeds, soy sauce, mirin, chilli sauce and grated ginger in a bowl. 2. Pour this mixture over the pork strips and stir to coat them evenly. 3. Place a large non-stick frying pan or wok on the heat and add the remaining 1 tbsp of oil. 4. Add the pork to the hot pan and fry it for 5 mins until it takes on some colour. 5. Introduce the sliced peppers and spring onions to the pan. 6. Continue cooking for another 5-10 mins until the pork is fully cooked and the vegetables have softened. 7. Serve the stir-fry immediately with cooked rice.
