These Korean chicken wings are a fantastic choice for entertaining, offering a delicious combination of sweet, spicy and sticky flavours. Skewered and cooked on the barbecue or under a grill, they are first roasted until crisp, then glazed with a homemade caramelised sauce. Finished with toasted sesame seeds and spring onions, they make an impressive starter or main course. The recipe serves six people with two skewers each and takes about 50 minutes to prepare and cook.

Korean BBQ Wings

Ingredients

  • 12 chicken wings
  • 11⁄2 tbsp sunflower oil
  • 1 tbsp sesame seeds toasted
  • 2 spring onions finely sliced at an angle
  • 4 tbsp rice wine vinegar
  • 3 tbsp soy sauce
  • 5 tbsp golden caster sugar
  • 2.5cm/1in piece ginger peeled and grated
  • 11/2 tbsp sriracha chilli sauce (or other hot chilli sauce)
  • 4 tbsp tomato ketchup

Method

  1. Submerge 12 wooden skewers in water for a minimum of 10 mins. For the sauce, combine the vinegar and soy sauce in a jug. In a small pan, warm the sugar with 1 tbsp water until dissolved, then simmer until it achieves a deep caramel colour. Carefully pour in the vinegar and soy mixture from a distance as it may splatter. Lower the heat, let it bubble for a few mins, then mix in the rest of the sauce ingredients. Cook for 5 mins until thickened and smooth, then set aside.
  2. Prepare your barbecue or preheat the oven grill. Once the coals are ready and spread evenly, trim the tips from the chicken wings. Straighten each wing and thread a skewer through its length. Coat the skin with oil and season. Cook the wings on the barbecue or under the grill for 10 mins per side, until the chicken is fully cooked and the skin is crisp and golden.
  3. Place the skewers on a large plate. Pour two-thirds of the sauce into a bowl, keeping the remainder in the pan. Generously brush each skewer with the sauce from the bowl. Return them to the heat and cook for a further 2-3 mins on each side until the sauce has caramelised.
  4. Move the skewers to a serving platter. Warm the reserved sauce, adding a little water to thin it if necessary, then drizzle it over the skewers. Scatter with the toasted sesame seeds and finely sliced spring onions.
