Klump
This German-inspired klump is a hearty side dish that layers creamy mashed potato over a savoury base of bacon, onion, pears and kale. It's a versatile recipe ideal for using up leftover ingredients, and can be finished with a sprinkle of cheese before baking until golden. The combination of sweet pears and smoky bacon creates a wonderfully comforting flavour. It serves six as a side and takes just under an hour to prepare and bake.
Ingredients
- 1kg floury potatoes (we like Desirée)
- 75g butter
- 150g bacon lardons (smoked or unsmoked)
- 1 large onion
- 2 ripe pears cored and chopped into chunks
- 400g kale (or 250g ready-sliced kale)
- handful grated cheddar (optional)
Method
- Cut the potatoes in half and boil them in lightly salted water until soft. Drain them and set aside to cool slightly. While they cook, melt 15g of the butter in a pan. Fry the bacon lardons until golden, then remove them. Add the onion and pear chunks to the same pan and cook until lightly coloured, then return the bacon to the pan.
- Separate the kale leaves from their tough stems. Blanch the leaves in boiling water for 2 mins. Drain and refresh them in cold water. Chop the kale and add it to the bacon pan. Pour in 2 tbsp water and some pepper, cover, and cook for about 15 mins, ensuring the pan does not dry out. Preheat your oven to 200C/180C fan/gas 6.
- Peel the cooled potatoes and return them to their cooking pan. Add the rest of the butter and some seasoning, then mash everything together until smooth.
- If the bacon and kale mixture seems too wet, take off the lid, increase the heat and cook to evaporate the liquid. Transfer this mixture into a gratin dish. Spread the mashed potato evenly over the top. Scatter over the grated cheese if you are using it. Bake for about 20 mins until the top is golden. For extra crispness, you can place it under the grill for 5 mins. Allow it to sit for a few minutes before serving.
