Stir-Fried Chicken with Chillies and Basil
This traditional Thai dish delivers a powerful aromatic flavour from garlic, shallots and fresh chillies, all stir-fried with chicken and finished with basil. It is a straightforward main course that comes together in under 40 minutes, making it an ideal choice for a flavourful weeknight dinner. The combination of fish sauce, soy and sugar creates a savoury, balanced sauce.
Ingredients
- 2 tbsp vegetable oil
- 450g boneless skinless chicken thighs, cut into chunks
- 3 tbsp coarsely chopped garlic
- 3 tbsp finely sliced shallots
- 3 fresh green or red chillies seeded and finely shredded
- 2 tbsp fish sauce (nam pla)
- 2 tsp dark soy sauce
- 2 tsp sugar
- a large handful of Thai or ordinary basil leaves
Method
- Get a wok or large frying pan very hot, then pour in 1 tbsp of the oil. Once the oil is hot, add the chicken pieces and stir-fry them for 8-10 minutes until they are browned. Remove the chicken from the pan with a slotted spoon and set it aside.
- Heat the wok again and add the rest of the oil. Put in the garlic and shallots, stir-frying them for 3 minutes until they turn golden brown.
- Add the chicken back to the wok along with the chillies, fish sauce, dark soy sauce and sugar. Continue to stir-fry for a further 8-10 minutes until the chicken is fully cooked. Mix through the basil leaves and serve immediately.
