This traditional Thai dish delivers a powerful aromatic flavour from garlic, shallots and fresh chillies, all stir-fried with chicken and finished with basil. Stir-Fried Chicken with Chillies and Basil

Ingredients

  • 2 tbsp vegetable oil
  • 450g boneless skinless chicken thighs, cut into chunks
  • 3 tbsp coarsely chopped garlic
  • 3 tbsp finely sliced shallots
  • 3 fresh green or red chillies seeded and finely shredded
  • 2 tbsp fish sauce (nam pla)
  • 2 tsp dark soy sauce
  • 2 tsp sugar
  • a large handful of Thai or ordinary basil leaves

Method

  1. Get a wok or large frying pan very hot, then pour in 1 tbsp of the oil. Once the oil is hot, add the chicken pieces and stir-fry them for 8-10 minutes until they are browned. Remove the chicken from the pan with a slotted spoon and set it aside.
  2. Heat the wok again and add the rest of the oil. Put in the garlic and shallots, stir-frying them for 3 minutes until they turn golden brown.
  3. Add the chicken back to the wok along with the chillies, fish sauce, dark soy sauce and sugar. Continue to stir-fry for a further 8-10 minutes until the chicken is fully cooked. Mix through the basil leaves and serve immediately.
