Karen's Tortellini Soup

Ingredients

  • 1 lb hot Italian sausage
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 5 cups beef broth
  • 1 cup water
  • 1 cup sliced carrot
  • 1 (2 cup) can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried chili
  • 2 teaspoons dried parsley
  • 3 ounces tomato paste
  • 1 zucchini, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 (8 ounce) package frozen cheese tortellini

Method

  1. Take the sausage meat from its casing and cook it in a large pot until browned and broken up. Set the meat aside, keeping 1 T of the fat in the pot.
  2. Cook the chopped onion in the reserved drippings until soft. Pour in the beef broth and water, then add the carrots, diced tomatoes with their juice, basil, oregano, chilies, tomato paste, and the cooked sausage. Bring this to a boil, then lower the heat and let it simmer without a lid for 30- 45 minutes.
  3. Stir in the chopped zucchini, green and red peppers, parsley, minced garlic, and the frozen cheese tortellini. Continue to simmer the soup for another 30- 45 minutes.
  4. Ladle the finished soup into bowls. It can be topped with a sprinkle of fresh parmesan cheese if you like.
