  • 5 eggs

  • 0.25 cup white sugar

  • 2 tablespoons butter
  • 1 tablespoon butter, melted
  • 0.25 cup confectioners' sugar, plus more for dusting

Method

  1. Place the raisins and rum in a small bowl, allowing them to soak for 30 minutes before draining.
  2. In a medium bowl, whisk together the eggs, milk, white sugar, vanilla, and salt, then gradually incorporate the flour to form a smooth batter. Mix in the drained raisins.
  3. Heat 2 tablespoons of butter in a large skillet, then pour in the batter. Cook for 5 to 6 minutes until the pancake is set and the base is golden brown. Flip it over and cook the other side for about 3 minutes until golden.
  4. Use a spatula or two forks to tear the pancake into bite-sized pieces. Drizzle with the melted butter and sprinkle with 0.25 cup confectioners' sugar. Turn the heat up and gently toss the pieces for about 5 minutes until the sugar caramelises. Dust with extra confectioners' sugar and serve with plum preserves.
