Kachumbari
Kachumbari is a vibrant South African salad featuring diced tomatoes, red onion and cucumber. It is enhanced with creamy avocado, fresh cilantro and a kick of jalapeño pepper, all brought together with a squeeze of lime juice. The onions are first soaked to mellow their sharpness, resulting in a crisp, refreshing mix. This adaptable recipe can be served as a zesty salsa, a light starter or a colourful accompaniment to main dishes.
Ingredients
- 1 medium red onion, diced
- 2 teaspoons sea salt
- 4 medium tomatoes, diced
- 0.5 medium cucumber, peeled and diced
- 0.25 cup chopped cilantro
- 1 jalapeno pepper, seeded and diced
- 1 avocado - peeled, pitted and diced
- 1 lime, juiced, or to taste
- salt and freshly ground black pepper to taste
Method
- Put the diced onion into a medium bowl, cover it with water and mix in the sea salt. Allow it to soak for 30 minutes, then drain thoroughly for 10 minutes.
- Combine the drained onion with the diced tomatoes, cucumber, cilantro, jalapeño and avocado in a large bowl. Add lime juice according to your preference, then season with salt and black pepper.
