Ingredients
- 2 lbs pork shoulder or 2 lbs pork belly, thinly sliced
- 3 scallions, cut into 2-inch pieces
- 1 small onion, thinly sliced
- 6 tablespoons gochujang Korean chili paste
- 3 tablespoons rice wine or 3 tablespoons mirin
- 2 tablespoons brown sugar
- 1 tablespoon corn syrup or 1 tablespoon honey
- 2 tablespoons sesame oil
- 3 tablespoons minced garlic
- 1 tablespoon grated fresh ginger
- 4 tablespoons grated Asian pears or 4 tablespoons grated apples

Method
- Place the sliced pork, scallions, and onion into a medium bowl.
- Whisk all the marinade ingredients thoroughly in a separate small bowl, then pour this mixture over the meat.
- Use your hands to combine everything evenly. Cover the bowl and allow it to rest for an hour. For longer marinating times, refrigerate it.
- Cook the meat on a grill or in a skillet. If using a pan, add a small amount of neutral oil along with sesame oil to the hot surface. Avoid overcrowding by cooking in batches for about 5 or 6 minutes, until the pork shows some caramelisation.
- Present the cooked pork with lettuce leaves, encouraging everyone to wrap the mixture inside the leaves for serving.
