Jerk-ish Pork Skewers
These pork skewers are perfect for a barbecue, packed with aromatic spices like allspice and cinnamon. The pork mince is mixed with herbs, garlic and lime zest, then shaped onto skewers and grilled. They cook in just a few minutes for a deliciously browned finish. Serve them with a fresh rice salad for a complete meal the whole family will enjoy. This recipe takes about 40 minutes to prepare and cook.
Ingredients
- 500g pork mince (at least 10% fat)
- 2 tsp allspice berries ground using a pestle and mortar
- 1 tsp ground cinnamon
- 2 tsp thyme leaves
- 2 spring onions finely chopped
- 2 garlic cloves finely chopped
- 1 lime zested and cut into quarters
- 2 tsp molasses or honey
- 2 tbsp olive oil
- rice salad to serve (optional)
- 8 wooden skewers soaked in water for at least 2 hrs
Method
- Place the pork mince into a bowl and combine it with the allspice, cinnamon, thyme, spring onions, garlic, lime zest and molasses or honey using your hands. Pour the olive oil onto a large plate.
- Split the mince mixture into eight equal parts, rolling each into a ball. With damp hands, take one ball and press it onto a skewer, moulding it into a sausage shape around the stick. Move the completed skewer to the oiled plate and refrigerate until ready to cook. They can be kept covered in the fridge for up to a day.
- Get the barbecue going. Once the coals have turned ashen, lay the skewers on the grill and cook without moving for 2 mins. Turn them carefully with tongs and grill for a further 5 mins before turning once more. Do this one more time until the skewers are fully cooked and have a good colour.
- Transfer the skewers to a platter, squeeze the lime wedges over them and add seasoning. Enjoy with a rice salad if desired, such as one made with cooked rice, sweetcorn, red onion and herbs.
