Jerk Chicken Curry with Beans

This Caribbean curry delivers big flavour from a short list of ingredients. Chicken drumsticks are coated in jerk seasoning, browned, then simmered with onions, coriander stalks and chopped tomatoes. Kidney beans are stirred in towards the end for a hearty, satisfying main course that's ready in 45 minutes. Serve scattered with fresh coriander leaves and rice for a complete meal.

Jerk Chicken Curry with Beans

Ingredients

  • 8 chicken drumsticks
  • 4 tsp jerk seasoning (we used Schwartz)
  • 4 tsp olive oil
  • 2 red onions sliced
  • small bunch coriander stalks finely chopped, leaves reserved
  • 2 x 400g cans chopped tomatoes
  • 410g can kidney bean drained

Method

  1. Coat the chicken drumsticks with 1 tsp of the jerk seasoning, salt and pepper. Warm half the oil in a large frying pan, brown the chicken all over, then set aside. Add the rest of the oil to the pan with the sliced onions and chopped coriander stalks, cooking for 5 mins until soft, and stir in the remaining jerk seasoning for the final min.
  2. Place the chicken back into the pan, add the canned tomatoes and bring everything to a simmer. Cover the pan and cook for 20 mins. Take off the lid, mix in the drained kidney beans and continue cooking for 10 mins more. Finish by sprinkling with the reserved coriander leaves and serve alongside rice.
