Japanese-style brown rice
This nutritious side dish features brown rice cooked with soya beans, then tossed in a flavourful dressing of soy sauce, olive oil, ginger and garlic. Finished with a scattering of fresh spring onions, it's a simple, wholesome accompaniment ready in 30 minutes. Perfect for adding a Japanese-inspired touch to your meal.
Ingredients
- 250g brown rice
- 175g frozen soya bean
- 1 tbsp low-salt soy sauce
- 1 tbsp extra virgin olive oil
- 2 tsp finely grated ginger
- 1 garlic clove crushed
- 4 spring onions thinly sliced on the diagonal
Method
- Prepare the brown rice according to the packet directions, introducing the soya beans during the last 2 mins of the cooking time. While that cooks, combine the soy sauce, olive oil, ginger and garlic in a small bowl.
- Once cooked, drain the rice and beans and place them into a bowl. Pour the soy sauce mixture over the top and mix thoroughly. Finish by topping with the sliced spring onions before serving.
