Japanese-style brown rice

Ingredients

  • 250g brown rice
  • 175g frozen soya bean
  • 1 tbsp low-salt soy sauce
  • 1 tbsp extra virgin olive oil
  • 2 tsp finely grated ginger
  • 1 garlic clove crushed
  • 4 spring onions thinly sliced on the diagonal

Method

  1. Prepare the brown rice according to the packet directions, introducing the soya beans during the last 2 mins of the cooking time. While that cooks, combine the soy sauce, olive oil, ginger and garlic in a small bowl.
  2. Once cooked, drain the rice and beans and place them into a bowl. Pour the soy sauce mixture over the top and mix thoroughly. Finish by topping with the sliced spring onions before serving.
