This traditional recipe produces 68 delightful jam tartlets. A simple shortcrust pastry, made with flour, butter, sugar and egg yolks, forms the base. The pastry cases are filled with your choice of jam or lemon curd before a brief bake. Using two or three different jams creates a wonderfully colourful assortment for any dessert spread. Jam Tartlets

Ingredients

  • 4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 8 ounces butter or 8 ounces margarine
  • 3 tablespoons sugar
  • 2 egg yolks
  • 6 -7 tablespoons cold water
  • any type jam

Method

  1. Set your oven to 400°F. Combine the flour and salt in a large mixing bowl.
  2. Use your fingertips to rub the butter into the flour until it has a breadcrumb-like texture.
  3. Mix the sugar into the crumbly mixture.
  4. Incorporate the egg yolks and cold water, stirring until a firm dough forms.
  5. Briefly knead the dough a few times within the bowl.
  6. Take small pieces of dough and roll them into balls roughly 1/2-inch in size.
  7. Press each ball into the base and up the sides of mini-muffin tray cups.
  8. Place about 1/2 teaspoon of jam into each pastry case and bake for 7-9 minutes.
