Jam Tartlets
This traditional recipe produces 68 delightful jam tartlets. A simple shortcrust pastry, made with flour, butter, sugar and egg yolks, forms the base. The pastry cases are filled with your choice of jam or lemon curd before a brief bake. Using two or three different jams creates a wonderfully colourful assortment for any dessert spread. The entire process takes just 28 minutes from start to finish.
Ingredients
- 4 cups all-purpose flour
- 1/4 teaspoon salt
- 8 ounces butter or 8 ounces margarine
- 3 tablespoons sugar
- 2 egg yolks
- 6 -7 tablespoons cold water
- any type jam
Method
- Set your oven to 400°F. Combine the flour and salt in a large mixing bowl.
- Use your fingertips to rub the butter into the flour until it has a breadcrumb-like texture.
- Mix the sugar into the crumbly mixture.
- Incorporate the egg yolks and cold water, stirring until a firm dough forms.
- Briefly knead the dough a few times within the bowl.
- Take small pieces of dough and roll them into balls roughly 1/2-inch in size.
- Press each ball into the base and up the sides of mini-muffin tray cups.
- Place about 1/2 teaspoon of jam into each pastry case and bake for 7-9 minutes.
