Island-Style Baked Mahi Mahi

Ingredients

  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 2 large eggs
  • 1 cup shredded Parmesan cheese
  • 3 tablespoons all-purpose flour
  • 4 (6 ounce) mahi mahi fillets
  • salt and ground black pepper to taste
  • 0.5 cup finely chopped toasted macadamia nuts
  • 1 cup mango salsa

Method

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. Warm the olive oil and butter in an ovenproof pan until the butter has melted, then take the pan off the heat.
  3. In a small, shallow bowl, beat the eggs. Combine the Parmesan cheese and flour in a separate shallow dish.
  4. Sprinkle the mahi mahi fillets with salt and pepper. Dip each one into the beaten egg, letting any extra drip off. Press them into the Parmesan mixture to coat all sides. Lay each coated fillet into the melted butter mixture, turning to coat. Evenly sprinkle the chopped macadamia nuts over the top of each fillet.
  5. Bake the fish in the preheated oven without a cover until it is opaque and flakes apart easily with a fork, which will take 7 to 11 minutes depending on how thick your fillets are.
  6. Transfer each baked fillet to a plate and spoon 1/4 cup of mango salsa over the top.
