Ingredients
- 2 cups distilled white vinegar
- 2 cups water
- 0.33333334326744 cup sea salt
- 1 pound raw Virginia peanuts in shells
Method
- Combine the vinegar, water, and salt in a large bowl, whisking them together. Add the peanuts and stir to coat them in the liquid. Place everything into a large resealable plastic bag and let it sit for 8 hours or overnight.
- Pour the peanuts and all the liquid into your pressure cooker. Secure the lid in place and lock it. Choose the high pressure setting as directed for your appliance. Program the cooker to run for 120 minutes, noting it will take 10 to 15 minutes for the pressure to rise.
- Once cooking is complete, let the pressure reduce naturally for about 20 minutes following your cooker's guidelines. After this, you can unlock the lid and carefully remove it.
