Instant Pot Peach Cobbler

This recipe transforms canned peaches into a warm, comforting cobbler using a pressure cooker. The peaches are sweetened and layered with a buttery cinnamon cake mix topping, then pressure cooked before a final crisping under the broiler. It's an ideal dessert for any time of year, requiring minimal effort for a satisfying result. The method combines the speed of the Instant Pot with a classic broiled finish.

Instant Pot Peach Cobbler

Ingredients

  • 3 (15 ounce) cans peaches, drained
  • 1 teaspoon cinnamon sugar
  • 1.5 cups white cake mix
  • 0.25 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter
  • 0.5 cup water

Method

  1. Drain the canned peaches and dry them with paper towels. Scatter the cinnamon sugar over the peaches.
  2. Combine the dry cake mix with the ground cinnamon. Work the butter into this mixture until it has a crumbly texture. Reserve half of this crumb mixture.
  3. Toss the peaches with the reserved half of the cake mix crumbs. Transfer this mixture into a 6-inch round dish. Sprinkle the remaining cake mix crumbs evenly over the top. Cover the dish tightly with foil.
  4. Add the water to the inner pot of your pressure cooker. Position the trivet inside. Place the foil-covered dish on the trivet. Secure the lid and lock it. Choose the high pressure setting and programme it for 12 minutes, allowing 10 to 15 minutes for the pressure to rise.
  5. Once cooking is complete, let the pressure reduce naturally for about 20 minutes. After this, unlock and take off the lid. Use the quick-release valve to let out any remaining pressure, which should take around 5 minutes.
  6. Adjust an oven rack so it sits roughly 6 inches from the broiler element. Turn the broiler on to preheat.
  7. With care, take the dish out of the pressure cooker and remove the foil. Place it under the broiler until the topping is golden and firm, for approximately 2 minutes.
