Indian Spiced Onions
This vibrant and spicy onion relish is a familiar sight alongside papadums in Indian eateries. It combines chopped onion with ketchup, lemon juice, sugar and a blend of fresh cilantro, fenugreek leaves and chilli powder. After a quick mix, the relish is left to chill for 24 hours, allowing the flavours to meld and the lemon juice to soften the sharpness of the onion. It yields enough for four servings as a zesty appetiser or snack.
Ingredients
- 1 onion, chopped
- 2 teaspoons ketchup
- 1 teaspoon lemon juice
- 1 tablespoon white sugar
- 1 teaspoon chopped fresh cilantro
- 1 teaspoon chopped fresh fenugreek leaves
- 1 teaspoon chili powder
- 1 pinch salt
Method
- Combine the chopped onion and ketchup in a medium bowl, stirring until the onion is thinly and evenly coated.
- Mix the lemon juice into the onion mixture.
- Add the sugar, chopped cilantro, fenugreek leaves, chilli powder and a pinch of salt, stirring until everything is well combined.
- Cover the bowl and place it in the refrigerator to chill for 24 hours, which lets the lemon juice slightly neutralise the onion's flavour.
