Huevos Rancheros
This recipe creates a satisfying breakfast of huevos rancheros. Tortillas are fried until soft, then layered with warm salsa, a fried or scrambled egg, seasoned ground beef and shredded cheddar cheese. Each serving is finished with a sprinkle of hot sauce. The entire process takes about 50 minutes to complete for six portions.
Ingredients
- 6 tortillas
- 1 1/4 cups salsa
- 1 lb cooked ground beef (Sausage, if you prefer)
- 6 eggs, fried or scrambled
- 1 1/2 cups shredded cheddar cheese
- vegetable oil
- hot sauce
Method
- Pour enough vegetable oil to cover the base of a skillet and warm it until hot.
- Fry the tortillas individually, cooking for about one minute per side.
- Transfer the cooked tortillas to drain.
- Warm the salsa in a separate pan.
- Assemble each tortilla by adding salsa, an egg, the cooked meat and shredded cheese.
- Finish each portion with a sprinkle of hot sauce.
