These tasty low fat muffins are a creation from my husband, perfect for a wholesome breakfast. They are made with a blend of flour and wheat germ, sweetened with honey and moistened with applesauce. Dried berries add a fruity burst. The recipe yields 12 servings and takes about 35 minutes to prepare from start to finish.

Hubby's Low Fat Dried Berry Muffins

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup wheat germ
  • 1 cup skim milk
  • 1/2 cup honey
  • 1 egg
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup applesauce
  • 1 tablespoon oil
  • 1/2 teaspoon vanilla
  • 1/2 cup mixed dried berries

Method

  1. Heat the oven to 400 degrees.
  2. Combine the skim milk, egg, applesauce, oil and vanilla in a mixing bowl.
  3. Stir this mixture thoroughly and then leave it to one side.
  4. Take a separate bowl and mix together the flour, wheat germ, baking powder and salt.
  5. Pour the wet ingredients into the dry bowl and stir just until everything is incorporated.
  6. Fold the mixed dried berries into the batter, mixing only until they are distributed.
  7. Place in the oven and bake at 400 degrees for 20-25 minutes or until they turn brown.
