Hubby's Low Fat Dried Berry Muffins
These tasty low fat muffins are a creation from my husband, perfect for a wholesome breakfast. They are made with a blend of flour and wheat germ, sweetened with honey and moistened with applesauce. Dried berries add a fruity burst. The recipe yields 12 servings and takes about 35 minutes to prepare from start to finish.
Ingredients
- 1 1/2 cups flour
- 1/2 cup wheat germ
- 1 cup skim milk
- 1/2 cup honey
- 1 egg
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup applesauce
- 1 tablespoon oil
- 1/2 teaspoon vanilla
- 1/2 cup mixed dried berries
Method
- Heat the oven to 400 degrees.
- Combine the skim milk, egg, applesauce, oil and vanilla in a mixing bowl.
- Stir this mixture thoroughly and then leave it to one side.
- Take a separate bowl and mix together the flour, wheat germ, baking powder and salt.
- Pour the wet ingredients into the dry bowl and stir just until everything is incorporated.
- Fold the mixed dried berries into the batter, mixing only until they are distributed.
- Place in the oven and bake at 400 degrees for 20-25 minutes or until they turn brown.
