Hubble Bubble Pumpkin Pot

Ingredients

  • 2 leeks thickly sliced and washed to remove any grit
  • 8 rashers smoked bacon chopped
  • 350g/12oz pumpkin flesh, cut into chunks (or use butternut squash)
  • 50g butter
  • 1 chicken stock cube
  • 250g long grain rice

Method

  1. Place the sliced leeks, chopped bacon and pumpkin chunks into a large bowl suitable for the microwave. Add the butter in small pieces over the top. Cover the bowl with cling film or a plate, piercing the film a few times if used. Microwave on High for 5 minutes.
  2. As the vegetables cook, boil a kettle. Use the stock cube to prepare 700ml of chicken stock. Take the hot bowl from the microwave with care and remove the cover. Add the rice, season with salt and pepper, then pour in the stock and mix well.
  3. Cover the bowl again with fresh cling film or the plate. Microwave on High for 10 minutes. Remove the cover, stir the contents, then microwave for a further 5-10 minutes. Once the rice is tender, let the dish stand for 5 minutes. Give it a final stir before serving directly from the bowl.
