Horchata
This traditional Mexican beverage is a wonderfully refreshing blend of long-grain rice, vanilla, sugar, and cinnamon. The simple method involves soaking blended rice to create a creamy, dairy-light base that is then sweetened and spiced. After chilling thoroughly, it makes for an excellent cooling drink to accompany spicy foods. The recipe yields approximately 6 cups of this popular, flavourful drink.
Ingredients
- 5 cups water
- 1 cup uncooked white long-grain rice
- 0.66666668653488 cup white sugar
- 0.5 cup milk
- 0.5 tablespoon vanilla extract
- 0.5 tablespoon ground cinnamon
Method
- Combine the water and rice in a blender and process for about 1 minute until the rice starts to fracture. Allow this mixture to sit at room temperature for a minimum of 3 hours.
- Pour the rice water through a strainer into a serving pitcher, leaving the rice solids behind. Add the sugar, milk, vanilla extract, and ground cinnamon, then stir well to combine.
- Refrigerate the horchata until it is completely cold. Serve it poured over ice.
