Honey Roasted Chantenay Carrots

Ingredients

  • 500g pack Chantenay carrots trimmed
  • 1 tbsp honey
  • 2 tsp butter
  • 1 tsp thyme leaves

Method

  1. Place the trimmed carrots into a large lidded frying pan. Cover them completely with cold water, put the lid on, and bring to a boil. Remove the lid once boiling and continue cooking for about 25-30 mins until all the water has completely evaporated.
  2. Lower the heat and stir in the honey, butter, and thyme leaves. Cook gently for about 5 mins, turning the carrots occasionally, until they become golden and caramelised all over.
