Honey & Garlic Duck Fried Rice
This recipe transforms duck breast into a rich fried rice, marinated in soy and hoisin. Brown rice is cooked with garlic and broth, then combined with the duck, scrambled eggs, and a colourful mix of vegetables like pea pods, bell pepper, and baby corn. A final glaze of honey, sesame oil, and garlic powder brings it all together. The dish is ready to serve hot for a complete and tasty dinner.
Ingredients
- 1 lb boneless skinless duck breasts, in 1/2 inch cubes
- 4 tablespoons soy sauce or 4 tablespoons tamari soy sauce
- 2 tablespoons hoisin sauce
- 3 cloves garlic, sliced
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup brown rice
- 2 tablespoons vegetable oil
- 6 green onions, white and 1/2 of green,sliced
- 1 cup Chinese pea pod, trimmed
- 1 small summer squash
- 1/2 yellow bell pepper, chopped
- 1 (10 ounce) can stir-fry baby corn
- 1 tablespoon vegetable oil (to scramble eggs)
- 3 eggs, beaten
- 2 tablespoons honey
- 1 tablespoon soy sauce or 1 tablespoon tamari soy sauce
- 2 teaspoons sesame oil
- 1/2 teaspoon garlic powder
Method
- Place the cubed duck breast in a plastic bag with soy sauce, hoisin sauce, and 2 sliced garlic cloves. Seal and refrigerate to marinate for at least 2 hours.
- To cook the brown rice, heat vegetable oil in a large pan and cook 2 minced garlic cloves until golden. Add the rice and stir until fragrant, then pour in the broth.
- Bring the mixture to a boil, then lower the heat, cover the pan, and simmer for 45 minutes until the rice is tender and has absorbed all the liquid.
- As the rice cooks, prepare the vegetables and eggs. Shred the yellow squash, drain the baby corn, and slice the green onions. Scramble the eggs in 1 tablespoon of vegetable oil and set them aside. Steam the pea pods and chopped bell pepper together for 1 minute, then plunge them into cold water.
- Heat 2 tablespoons of vegetable oil in a large skillet. Cook the marinated duck cubes along with the marinade and green onions for 10 minutes.
- Add the cooked rice to the skillet and increase the heat slightly. Stir constantly for about 10 more minutes until the marinade thickens.
- Mix in the honey, soy sauce, sesame oil, and garlic powder. Continue cooking for another 5 minutes to allow the flavours to combine.
- Gently fold in the steamed pea pods, peppers, shredded yellow squash, baby corn, and scrambled eggs.
- Cook for a further 3 to 4 minutes, just until the vegetables and eggs are warmed through.
- Serve the fried rice straight away.
