The recipe uses simple ingredients like Granny Smith apples, golden caster sugar, and golden syrup to create a glossy, hard-crack toffee coating. Preparing the apples correctly ensures the caramel adheres perfectly. This treat can be prepared up to two days ahead, making it a convenient and delightful snack.

Homemade Toffee Apples

Ingredients

  • 8 Granny Smith apples
  • 400g golden caster sugar
  • 1 tsp vinegar
  • 4 tbsp golden syrup

Method

  1. Put the apples into a large bowl and cover them completely with boiling water, which may require two batches. This process removes the waxy layer so the caramel adheres. Dry the apples well and take off any stalks. Insert a wooden skewer or lolly stick firmly into the stalk end of every apple.
  2. Arrange a sheet of baking parchment near your cooker and place the apples on it. Pour the sugar and 100ml water into a saucepan and place it over a medium heat. Allow it to cook for 5 mins until the sugar has dissolved, then mix in the vinegar and syrup. Put a sugar thermometer into the pan and boil the mixture to 150C or the 'hard crack' stage. Without a thermometer, test by dropping a little toffee into cold water. it should set immediately into a brittle, breakable state. If it remains soft, continue boiling.
  3. Carefully and swiftly dip and rotate each apple in the hot toffee for full coverage. Allow any surplus to drip off, then set the apple on the baking parchment to set. You might need to gently reheat the toffee if it cools and becomes too thick. Let the toffee apples cool completely before serving. They keep for up to 2 days when stored somewhere dry.
