Create a refreshing jug of still, cloudy pink lemonade, perfect for a British afternoon tea. This vibrant drink combines the zing of fresh lemons with sweet raspberries for a beautifully coloured and flavourful beverage. It requires only a handful of ingredients and can be prepared in about 10 minutes, then chilled until you are ready to serve it over plenty of ice.

Homemade pink lemonade

Ingredients

  • 8 lemons plus extra slices to serve
  • 200g caster sugar plus extra to taste
  • 140g raspberry plus extra to serve
  • ice to serve

Method

  1. Use a peeler to remove the zest from the lemons, taking care to avoid the white pith. Trim any pith from the strips.
  2. Juice all the lemons.
  3. In a large jug, combine the fresh lemon juice, lemon zest, 200g caster sugar, and 140g raspberries.
  4. Pour 1.2 litres of boiling water into the jug and stir well.
  5. Allow the mixture to cool completely.
  6. Strain the liquid through a sieve, using the back of a spoon to press the juice from the fruit pulp.
  7. Taste the lemonade and add more caster sugar if desired.
  8. Place the jug in the refrigerator to chill thoroughly.
  9. When ready to serve, add extra lemon slices, a few raspberries, and a generous amount of ice.
