Homemade pink lemonade
Create a refreshing jug of still, cloudy pink lemonade, perfect for a British afternoon tea. This vibrant drink combines the zing of fresh lemons with sweet raspberries for a beautifully coloured and flavourful beverage. It requires only a handful of ingredients and can be prepared in about 10 minutes, then chilled until you are ready to serve it over plenty of ice.
Ingredients
- 8 lemons plus extra slices to serve
- 200g caster sugar plus extra to taste
- 140g raspberry plus extra to serve
- ice to serve
Method
- Use a peeler to remove the zest from the lemons, taking care to avoid the white pith. Trim any pith from the strips.
- Juice all the lemons.
- In a large jug, combine the fresh lemon juice, lemon zest, 200g caster sugar, and 140g raspberries.
- Pour 1.2 litres of boiling water into the jug and stir well.
- Allow the mixture to cool completely.
- Strain the liquid through a sieve, using the back of a spoon to press the juice from the fruit pulp.
- Taste the lemonade and add more caster sugar if desired.
- Place the jug in the refrigerator to chill thoroughly.
- When ready to serve, add extra lemon slices, a few raspberries, and a generous amount of ice.
