Homemade Hummus with Pitta Chips

This classic Middle Eastern snack is a favourite for all ages. Prepare a smooth, creamy hummus from chickpeas, lemon, and cumin, paired with homemade pitta chips baked until crisp. It's an ideal healthy option to keep in the fridge for a quick bite. The recipe serves six to eight people and takes just 20 minutes to prepare.

Homemade Hummus with Pitta Chips

Ingredients

  • 3 pitta breads
  • 5 tbsp olive oil
  • 400g can chickpeas rinsed and drained
  • 1/2 tsp ground cumin
  • 1 garlic clove crushed
  • juice 1 lemon

Method

  1. Set your oven to 180C/fan 160C/gas 4. Halve each pitta to create two thin layers, then cut these into strips or wedges. Lightly oil a shallow baking tray and lay the pitta pieces on it. Bake for 10 mins until crisp, then allow to cool. They can be stored in an airtight container for 4-5 days.
  2. For the hummus, place the rinsed chickpeas into a food processor. Add all the other ingredients along with 3 tbsp cold water and blend. Continue to add water, about a tbsp at a time, until you achieve a smooth, spoonable consistency. Transfer to a bowl for serving. It can be refrigerated for up to 3 days.
