Homemade Brown Sugar Bubble Tea

Ingredients

  • 4.25 cups water, divided
  • 0.25 cup white tapioca pearls (boba)
  • 2 tablespoons black tea leaves
  • 0.25 cup brown sugar
  • 1 cup ice cubes
  • 0.25 cup milk
  • 2 tablespoons sweetened condensed milk, or to taste

Method

  1. Place 2 cups of water into a small saucepan and bring it to a rolling boil. Gently stir in the tapioca pearls and continue until they start to rise to the surface. Lower the heat and allow them to simmer until they become soft and dark, which should take about 25 minutes. Take the pan off the heat, cover it, and leave it to stand for 15 minutes.
  2. While the pearls cook, boil another 2 cups of water. Once boiling, take it off the heat and add the black tea leaves. Allow the tea to infuse for 15 minutes. Afterwards, strain the leaves out and place the tea in the refrigerator to cool.
  3. Drain the cooked pearls. In the same saucepan, bring 1/4 cup of water to a boil. Mix in the brown sugar until it fully dissolves. Place the drained pearls into this syrup and leave them to cool to room temperature, which will take about 15 minutes.
  4. Evenly distribute the prepared pearls and your preferred quantity of the syrup between two tall glasses. Then, pour the chilled tea over the pearls in each glass.
  5. To each glass, add ice cubes, milk, and sweetened condensed milk according to your taste. Give the drink a good stir just before you enjoy it.
