Homemade Beef Burgers

Ingredients

  • 1 small onion diced
  • 500g good-quality beef mince
  • 1 egg
  • 1 tbsp vegetable oil
  • 4 burger buns
  • All or any of the following to serve: sliced tomato beetroot, horseradish sauce, mayonnaise, ketchup, handful iceberg lettuce, rocket, watercress

Method

  1. Place 500g beef mince into a bowl with one small diced onion and an egg, then combine thoroughly.
  2. Separate the mixture into four equal portions. With damp hands, roll each portion into a ball roughly the size of a tennis ball.
  3. Set each ball in your palm and press gently to form a patty approximately 3cm thick. Ensure uniform thickness for even cooking.
  4. Transfer the patties to a plate, cover with cling film, and refrigerate for a minimum of 30 mins to set.
  5. Prepare your barbecue until it is medium hot, indicated by white ash over red coals, which takes about 40 mins after lighting. Lightly coat one side of each patty with vegetable oil.
  6. Position the burgers oil-side down on the grill. Allow them to cook for 5 mins until a light char forms, avoiding moving them.
  7. Brush oil onto the other side, then flip each burger carefully using tongs. Resist pressing down on the meat.
  8. Grill for another 5 mins for a medium result. For a pink centre, reduce cooking by 1 min per side. for well done, add 1 min more.
  9. Remove the burgers from the barbecue. Let them rest briefly on a plate so the juices redistribute.
