Herrings Rolled with Mustard and Pancetta
This Scandinavian dinner dish offers a clever preparation for four people. Herring fillets are coated with Dijon mustard and wrapped in thin pancetta slices before being rolled and secured. Ingredients
- 8 herring fillets
- 2 tbsp Dijon mustard
- 8 thin slices pancetta
- 8 bay leaves
- 1 lemon cut into 8 thin slices
- 1 tbsp olive oil
Method
- Preheat the oven to 220C/fan 200C/gas 7. Place the herring fillets skin side down. Coat each one with mustard and top with a slice of pancetta. Roll each fillet from the tail end into a spiral, securing it with a toothpick, a bay leaf, and a slice of lemon. Arrange the rolls in a baking tray or ceramic dish.
- Pour olive oil over the prepared fillets. Place in the oven to roast for 15-20 mins until they are cooked through and the edges begin to turn golden. Serve two rolls per person alongside your choice of accompaniment.
