Hearts of Palm and Avocado Salad

This refreshing salad combines tender hearts of palm and creamy avocado with a colourful mix of sweet onion, bell pepper, radish, and carrot. A simple dressing of lime juice, olive oil, and a hint of chilli powder brings all the flavours together. It's a light, quick dish perfect for a speedy lunch or a bright side. The recipe serves four and takes only 15 minutes to prepare from start to finish.

Hearts of Palm and Avocado Salad

Ingredients

  • 2 (14 ounce) cans whole hearts of palm, drained
  • 1 lime, juiced
  • 1.5 teaspoons red wine vinegar
  • 0.25 cup extra-virgin olive oil
  • 0.5 teaspoon chili powder
  • 0.75 teaspoon kosher salt
  • 0.5 cup thinly sliced sweet onion
  • 0.5 cup chopped red bell pepper
  • 0.5 cup matchstick-cut radishes
  • 0.333 cup matchstick-cut carrots
  • 0.25 cup chopped tomato
  • 1 serrano chile pepper, seeded and minced
  • 0.25 cup chopped fresh cilantro
  • 1 avocado, diced

Method

  1. Peel the hearts of palm lengthwise into strips, then cut the pile of strips in half. Place these aside.
  2. In a small bowl, whisk together the lime juice and red wine vinegar, then whisk in the extra-virgin olive oil. Add the chilli powder and kosher salt to season, then set this vinaigrette aside.
  3. In a medium bowl, combine the thinly sliced sweet onion, chopped red bell pepper, matchstick-cut radishes, matchstick-cut carrots, chopped tomato, minced serrano chile, and chopped fresh cilantro. Pour the reserved vinaigrette over and stir to combine. Carefully fold in the diced avocado and the prepared hearts of palm. Serve straight away.
