Healthy Potato Salad
This healthy potato salad offers a fresh twist on a classic side. New potatoes are boiled until tender, then tossed in a vibrant, homemade oil blended with fresh basil, parsley, garlic, and white wine vinegar. It's a flavourful, herby dish ideal for serving at a barbecue or summer meal. The salad can be prepared ahead, as it keeps well for up to two days.
Ingredients
- 1large bunch basil
- 1large bunch parsley
- 1kg new potatoes larger potatoes halved
- 100ml extra virgin olive oil
- 2 tbsp white wine vinegar
- 1 small garlic clove
Method
- Boil a large pan of salted water. Submerge the basil for 30 secs until it wilts, then remove it with a slotted spoon and allow it to cool a little. Place the potatoes into the water and boil them until they are tender.
- While the potatoes cook, squeeze excess water from the basil over the sink. Transfer it to a blender with the oil, vinegar, garlic and a generous pinch of seasoning. Blend the mixture into a bright green oil.
- Drain the potatoes and let them steam dry. Chop the parsley, then combine it with the potatoes in a serving bowl. Season the salad and toss everything with the prepared basil oil. It will keep for two days.
