Healthy Gumbo

Ingredients

  • 1 package sausage (I use Smoked sausage)
  • 1 can corn
  • 1 can stewed tomatoes (I use DelMonte with mexican seasonings)
  • 2 cups Minute Rice
  • 1 can chicken broth
  • 1 cup water
  • 1 tablespoon chicken bouillon (you can substitute water/bouillon with another can of chicken broth, Bouillon gives a better flavor.)

Method

  1. Cook the sausage in a pot with 1/2 cup water until the liquid has fully evaporated.
  2. Introduce every other ingredient to the pot, but leave out the rice for now.
  3. Bring the mixture to a boil, then lower the heat and simmer for about 10 min.
  4. Switch off the heat and stir in the rice.
  5. Put the lid on the pot and allow it to stand for 10 more minutes.
  6. Your healthy gumbo is now ready to serve.
