Healthy Gumbo
This straightforward one-pot dish comes from a health-conscious friend. It requires minimal effort and cleaning, combining smoked sausage with canned tomatoes, corn, and quick-cooking rice in a flavourful broth. The entire process takes around 30 minutes, yielding a satisfying meal for a crowd. It's a convenient and tasty option for a busy weeknight.
Ingredients
- 1 package sausage (I use Smoked sausage)
- 1 can corn
- 1 can stewed tomatoes (I use DelMonte with mexican seasonings)
- 2 cups Minute Rice
- 1 can chicken broth
- 1 cup water
- 1 tablespoon chicken bouillon (you can substitute water/bouillon with another can of chicken broth, Bouillon gives a better flavor.)
Method
- Cook the sausage in a pot with 1/2 cup water until the liquid has fully evaporated.
- Introduce every other ingredient to the pot, but leave out the rice for now.
- Bring the mixture to a boil, then lower the heat and simmer for about 10 min.
- Switch off the heat and stir in the rice.
- Put the lid on the pot and allow it to stand for 10 more minutes.
- Your healthy gumbo is now ready to serve.
