Hawaiian-Style Chili
This American dinner dish is a unique take on classic chili, blending savoury ground beef with sweet pineapple chunks. It combines onions, red bell peppers, stewed tomatoes, tomato sauce and kidney beans, all seasoned with chili powder and salt. The recipe yields 10 servings and takes just 40 minutes to prepare, simmering to a rich consistency. The result is a hearty, sweet and tangy meal perfect for a family supper.
Ingredients
- 2 pounds ground beef
- 6 onions, chopped
- 2 red bell peppers, seeded and chopped
- 2 (16 ounce) cans stewed tomatoes, with juice
- 2 (15.5 ounce) cans kidney beans, with liquid
- 1 (16 ounce) can tomato sauce
- 1 (16 ounce) can pineapple chunks, drained
- 2 tablespoons chili powder
- 2 teaspoons salt
Method
- Place a large Dutch oven over high heat until it is hot. Add the ground beef and cook it, stirring constantly to crumble it into small pieces, until it is just barely pink. Mix in the chopped onions and bell peppers and continue cooking for about 5 minutes, until the meat is browned and the onions are soft and translucent. Transfer the entire mixture to a large mesh strainer and press to remove any extra grease.
- Place the meat and vegetable mixture back into the Dutch oven. Add the stewed tomatoes with their juice, the kidney beans with their liquid, the tomato sauce and the drained pineapple chunks. Season with the chili powder and salt. Bring everything to a boil, then lower the heat to medium-low. Let it simmer without a lid for about 10 minutes, until it thickens to your preferred consistency.
