Hawaiian Pineapple Chicken
This baked chicken dish brings a taste of the islands to your dinner table. Chicken pieces are coated in a homemade sweet and tangy sauce featuring brown sugar, ketchup, vinegar, and crushed pineapple, then baked until perfectly glazed and cooked through. It's a simple yet flavourful meal that serves six and is ready in just over an hour.
Ingredients
- 0.25 cup butter
- 0.33333334326744 cup ketchup
- 0.25 cup brown sugar
- 2 teaspoons cornstarch
- 0.25 cup vinegar
- 1 teaspoon salt
- 1 teaspoon soy sauce
- 0.5 teaspoon Worcestershire sauce
- 1 (9 ounce) can crushed pineapple
- 3 pounds assorted chicken pieces such as breasts, thighs, wings, and drumsticks
Method
- Set your oven to heat to 325 degrees F (165 degrees C).
- Place butter in a saucepan to melt. Mix in the ketchup and brown sugar, stirring until the sugar has dissolved. Combine cornstarch with vinegar in a separate bowl until smooth, then add this to the pan. Whisk in the salt, soy sauce, and Worcestershire sauce, bringing the mixture to a simmer while whisking. Continue cooking for about 2 minutes until it thickens. Fold in the pineapple and take the pan off the heat.
- Place the assorted chicken pieces into a 9x13-inch baking dish. Pour the prepared pineapple sauce evenly over the chicken.
- Bake the chicken in the heated oven for about 45 minutes. It is ready when the sauce is bubbling, the chicken is browned, and the juices run clear. The internal temperature in the thickest part of a thigh should reach at least 165 degrees F (74 degrees C).
