Hawaiian Chicken Pineapple Kabobs

Ingredients

  • 3 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons sherry
  • 1 tablespoon sesame oil
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon garlic powder
  • 8 skinless, boneless chicken breast halves - cut into 2 inch pieces
  • 1 (20 ounce) can pineapple chunks, drained

Method

  1. In a shallow glass dish, mix the soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder. Place the chicken pieces and pineapple chunks into the dish and stir to coat them thoroughly. Cover the dish and let it marinate in the refrigerator for 1 to 2 hours.
  2. Prepare your grill by preheating it to medium-high heat. Lightly oil the grate.
  3. Take the skewers and thread the chicken and pineapple pieces onto them in an alternating pattern. Dispose of any leftover marinade.
  4. Place the skewers on the preheated grill. Cook them, turning now and then, until the chicken is fully cooked with no pink inside and the juices run clear, which should take 15 to 20 minutes. You can check by inserting an instant-read thermometer into the centres. it should register at least 165 degrees F (74 degrees C).
