This aromatic harissa oil is a versatile Moroccan condiment. It is made by grinding dried chillies and spices with garlic before blending with olive oil. Perfect for marinating meats, roasting vegetables or brushing onto food for the barbecue. It yields about 300ml and will keep fresh in your refrigerator for up to one week.

Harissa Oil

Ingredients

  • 2 dried chillies
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp caraway seeds
  • generous pinch dried mint leaves, crumbled
  • 1/2 tsp sea salt
  • 2 garlic cloves peeled and smashed
  • roughly olive oil

Method

  1. Grind the dried chillies, cumin seeds, coriander seeds, caraway seeds, dried mint and sea salt together in a pestle and mortar until you have a coarse mixture.
  2. Add the smashed garlic cloves to the ground spices and stir to combine.
  3. Stir the olive oil into the spice and garlic mixture until fully incorporated.
  4. Transfer the finished harissa oil into a jar, letting the spices settle at the bottom. Store it in the fridge where it will keep for 1 week.
