Ham & Eggy Bread with Salsa

Ingredients
- 2 thick slices of bread
- a good slice of lean ham
- 1 egg beaten
- 2 tbsp milk
- small knob of butter
- 1 tbsp olive oil
- ready-made tomato salsa to serve
Method
- 1. Butter the bread lightly and make a sandwich with the slice of lean ham. Slice the sandwich diagonally into two halves. 2. Combine the beaten egg and milk in a shallow dish, seasoning as desired. 3. Heat the butter and 1 tsp olive oil in a non-stick pan until the butter begins to foam. 4. Coat each sandwich half thoroughly in the egg mixture on both sides. 5. Place the dipped sandwiches in the pan and cook for 2 mins per side until they are golden and set. 6. Serve immediately with spoonfuls of the ready-made tomato salsa.
