Haluski (Pan-Fried Cabbage and Noodles)
This traditional Haluski is a comforting pan-fried dish featuring butter, sweet onions, thinly sliced cabbage and wide egg noodles. The onions are gently sautéed with a touch of brown sugar before the cabbage is added. Optional caraway seeds provide an aromatic note. It's a versatile recipe that can be served as a hearty main or a satisfying side dish, ready in just 35 minutes. The key is to cook the cabbage to your preferred texture, whether tender or slightly browned.
Ingredients
- 4 cups wide egg noodles
- 1/2 cup butter
- 2 cups sliced sweet onions, about 1/8 inch thick
- 2 teaspoons brown sugar
- 6 cups cabbage, sliced thin
- 1 teaspoon caraway seed (optional)
- 1/2 teaspoon salt

Method
- Prepare the egg noodles by boiling them as directed on the package. Once cooked, toss them with a small amount of oil to stop them sticking and set to one side.
- As the noodles cook, place a large, deep skillet on the stove and melt the butter over medium-low heat.
- Place the sliced onions in the skillet, scatter the brown sugar over them and sauté. Stir now and then for about 5 to 10 minutes until they soften and start to turn golden.
- Introduce the thinly sliced cabbage to the skillet, mixing it thoroughly with the onions. Continue to sauté for about 5 minutes, stirring occasionally.
- Mix in the caraway seeds if you are using them. Put a lid on the skillet, lower the heat and allow it to simmer for 5 to 10 minutes.
- Increase the heat back to medium. Add the prepared noodles along with the salt and pepper. Stir everything together well until the noodles are thoroughly warmed.
- Taste and add more seasoning if needed before serving the dish hot.
