Ground Beef Taco Bake
This hearty casserole brings together classic taco flavours in a convenient baked dish. Seasoned ground beef is combined with rice, tomatoes, green chiles and a savoury sauce, then topped with sharp Cheddar cheese and baked until golden. It's a satisfying one-pan meal perfect for a family dinner, yielding eight generous portions.
Ingredients
- 1 serving cooking spray
- 0.75 pound ground beef
- 0.33333334326744 cup diced onion
- 1 clove garlic, minced
- 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
- 1 (8 ounce) can tomato sauce
- 1 cup long-grain white rice
- 1 cup water
- 1 (1.25 ounce) package taco seasoning
- 1 sheet aluminum foil
- 0.5 (8 ounce) package grated sharp Cheddar cheese
Method
- Set your oven to 375 degrees F (190 degrees C). Use cooking spray to coat a 7x11-inch casserole dish.
- Place the ground beef in a skillet to cook, stirring and breaking it apart until it browns, which takes about 5 minutes. Next, add the onion and garlic and cook for another 5 minutes. Stir in the diced tomatoes and green chiles, tomato sauce, rice, water, and taco seasoning until well combined. Move this mixture into your prepared dish and cover it with a sheet of aluminium foil.
- Bake the covered dish in your preheated oven for 30 minutes. Take the foil off and evenly scatter the grated sharp Cheddar cheese over the top. Return it to the oven and bake for about 15 minutes more, until the cheese is golden and lightly browned.
