This light Thai dish features salmon fillets grilled until just cooked, then served with a vibrant stir-fry of ginger, chilli, and spring onions in a sweet soy glaze. Fresh coriander is stirred through at the end for a fragrant finish. It's an ideal recipe for a speedy yet flavourful lunch or dinner, ready in just 15 minutes. Serve it with rice or noodles for a complete meal.

Grilled Thai Salmon

Ingredients

  • 4 x 140g/5oz salmon fillets
  • 2 tsp sunflower oil
  • small knob of root ginger peeled and grated
  • 1 mild red chilli finely sliced (deseed if you want less heat)
  • bunch spring onions finely sliced
  • 1 1/2 tbsp sweet soy sauce
  • 1/4 tsp sugar
  • 1 x 20g pack coriander leaves only chopped

Method

  1. Set your grill to high. Arrange the salmon fillets in a shallow baking dish and grill them for 4-5 mins until cooked through but still slightly pink inside. Once done, cover the dish and set it aside.
  2. Heat a wok and add the sunflower oil. Stir-fry the grated ginger, sliced red chilli, and finely sliced spring onions for 2-3 mins. Mix in the sweet soy sauce, sugar, and a splash of water, then remove the wok from the heat. Stir the chopped coriander leaves into the sauce and serve it immediately alongside the grilled salmon.
