Grilled Margarita Chicken Breasts
This grilled chicken dish is a real crowd-pleaser, perfect for a summer cookout. Boneless chicken breasts with skin are marinated in a vibrant mix of fresh lime juice, zest, olive oil, tequila and a hint of cayenne pepper. After marinating for 1 hour, they are grilled to perfection and basted with the boiled marinade. The result is juicy, flavourful chicken with a deliciously tangy and slightly spicy crust. Ingredients
- 1 teaspoon lime zest
- 1/4 cup fresh lime juice
- 1/4 cup extra virgin olive oil
- 2 tablespoons tequila
- 1 teaspoon kosher salt
- 1/8 teaspoon cayenne pepper
- 4 boneless chicken breast halves (WITH SKIN)
Method
- Combine the lime zest, lime juice, olive oil, tequila, salt and cayenne pepper in a medium bowl, whisking them together.
- Put the chicken breast halves into a large plastic bag that can be sealed.
- Transfer the marinade into the bag with the chicken, seal it and place in the refrigerator for 1 hour, remembering to turn the bag now and then.
- Prepare your barbecue grill, allowing it to heat up.
- Take the chicken out of the bag and pour the used marinade into a small saucepan.
- Place the saucepan over heat and bring the marinade to a full boil, letting it boil for 1 full minute.
- Position the chicken breasts on the grill with the skin side facing down and cook them for 8 to 12 minutes.
- Flip the chicken over and use the boiled marinade to baste the meat.
- Keep grilling and basting the chicken until it is cooked through with no pink remaining and the juices are clear.
