Grilled Corn with Garlic Mayo and Grated Cheese
This vibrant Brazilian side dish transforms simple corn on the cob. The cobs are first boiled, then coated in a punchy garlic mayonnaise before grilling. Once charred, they are finished with a generous sprinkle of grated Parmesan and chopped coriander, with a final squeeze of fresh lime juice adding a zesty lift. It's a flavourful and quick accompaniment, perfect for a summer barbecue.
Ingredients
- 6 corn cobs
- 2 garlic cloves crushed
- 6 tbsp mayonnaise
- 4 tbsp grated parmesan (or vegetarian alternative)
- 2 tbsp finely chopped coriander
- 1 lime cut into pieces, for squeezing
Method
- Boil the corn cobs for 5 mins and keep them in the hot water until you are ready to cook. Combine the crushed garlic with the mayonnaise in a small bowl. Before grilling, take the cobs from the water, dry them, and rub the garlic mayonnaise all over each one.
- Season the corn and place it on the grill until char marks form, for about 5 mins. Take the cobs off the heat and sprinkle over the grated Parmesan and chopped coriander. Serve with lime pieces to squeeze over.
