Grilled Chicken With Coriander Sauce
This dish features chicken breasts marinated in a savoury blend of sesame oil, fish sauce, garlic, and chilli, then grilled to perfection. It is accompanied by a sweet and tangy coriander sauce made from a reduced rice vinegar syrup, infused with more garlic, fresh chillies, and chopped coriander. The result is a quick, aromatic meal with contrasting flavours and textures, ideal for a speedy yet impressive dinner.
Ingredients
- 4 boneless chicken breasts, with skin
- 3 tablespoons sesame oil
- 3 tablespoons fish sauce
- 1 teaspoon sugar
- 4 cloves garlic, peeled and finely chopped
- 2 fresh red chilies, seeded and finely chopped
- 2 tablespoons chopped cilantro
- 9 fluid ounces rice vinegar
- 6 ounces sugar
- 1 teaspoon salt

Method
- Combine the marinade ingredients and pour them over the chicken, then refrigerate for at least 30 minutes.
- As the chicken marinates, begin making the accompanying sauce.
- Place the vinegar and sugar in a saucepan and warm it, stirring until the sugar has fully dissolved.
- Allow the mixture to come to a boil, then let it simmer until it thickens into a syrup.
- This process should take just a minute or two. Transfer the syrup to a bowl.
- Turn on your grill to preheat it.
- Position the chicken roughly 20cm from the heat source and cook each side until nicely coloured.
- This takes about 6 minutes for the first side and 4 minutes for the second. Serve with the Coriander Sauce and Fragrant Rice.
