Grilled Chicken With Coriander Sauce

Ingredients

  • 4 boneless chicken breasts, with skin
  • 3 tablespoons sesame oil
  • 3 tablespoons fish sauce
  • 1 teaspoon sugar
  • 4 cloves garlic, peeled and finely chopped
  • 2 fresh red chilies, seeded and finely chopped
  • 2 tablespoons chopped cilantro
  • 9 fluid ounces rice vinegar
  • 6 ounces sugar
  • 1 teaspoon salt
  • 4 cloves garlic, peeled and finely chopped

  • 2 tablespoons chopped cilantro

Method

  1. Combine the marinade ingredients and pour them over the chicken, then refrigerate for at least 30 minutes.
  2. As the chicken marinates, begin making the accompanying sauce.
  3. Place the vinegar and sugar in a saucepan and warm it, stirring until the sugar has fully dissolved.
  4. Allow the mixture to come to a boil, then let it simmer until it thickens into a syrup.
  5. This process should take just a minute or two. Transfer the syrup to a bowl.
  6. Turn on your grill to preheat it.
  7. Position the chicken roughly 20cm from the heat source and cook each side until nicely coloured.
  8. This takes about 6 minutes for the first side and 4 minutes for the second. Serve with the Coriander Sauce and Fragrant Rice.
