Grilled Chicken Breast with Creamy Red Pepper Sauce
This dish features grilled chicken breasts served with a rich and creamy red pepper sauce. The sauce is made by sautéing onion, garlic, and pepper strips before blending them with cream cheese, sour cream, and a touch of white wine. It's a healthy option that can be adapted with low-fat dairy. The sauce is added after cooking the chicken, preventing it from burning on the grill. Fresh parsley provides a final garnish.
Ingredients
- 4 chicken breasts
- 4 teaspoons butter or 4 teaspoons margarine
- 1/2 cup diced onion
- 1 clove garlic, minced
- 1 red pepper, cut in strips
- 3 tablespoons whipped cream cheese
- 1 tablespoon sour cream
- 2 teaspoons dry white wine (or vermouth)
- 2 tablespoons chopped fresh parsley
Method
- Prepare the sauce while the chicken breasts are on the grill.
- Cook the onion and garlic in butter or margarine for 2 minutes until the onion is clear.
- Put in the pepper strips and cook for about 5 minutes, stirring now and then, until they are tender but still crisp.
- At the same time, place the cream cheese, sour cream, and wine into a blender.
- Transfer the cooked peppers and onions to the blender and blend until the mixture is smooth, pausing to scrape the sides.
- Pour the sauce back into the saucepan and warm it gently, ensuring it does not boil.
- Spoon the sauce over the cooked chicken and finish with a sprinkle of chopped parsley.
