This dish features grilled chicken breasts served with a rich and creamy red pepper sauce. The sauce is made by sautéing onion, garlic, and pepper strips before blending them with cream cheese, sour cream, and a touch of white wine. It's a healthy option that can be adapted with low-fat dairy. The sauce is added after cooking the chicken, preventing it from burning on the grill. Fresh parsley provides a final garnish.

Ingredients

  • 4 chicken breasts
  • 4 teaspoons butter or 4 teaspoons margarine
  • 1/2 cup diced onion
  • 1 clove garlic, minced
  • 1 red pepper, cut in strips
  • 3 tablespoons whipped cream cheese

Method

  1. Prepare the sauce while the chicken breasts are on the grill.
  2. Cook the onion and garlic in butter or margarine for 2 minutes until the onion is clear.
  3. Put in the pepper strips and cook for about 5 minutes, stirring now and then, until they are tender but still crisp.

  5. Transfer the cooked peppers and onions to the blender and blend until the mixture is smooth, pausing to scrape the sides.
  6. Pour the sauce back into the saucepan and warm it gently, ensuring it does not boil.
  7. Spoon the sauce over the cooked chicken and finish with a sprinkle of chopped parsley.
